Salmon with walnut parsley pesto

Ingredients

per 1 serving

  • 1 salmon fillet
  • 1 cup fresh chopped parsley (35 g)
  • ½ cup chopped walnuts (50 g)
  • 1 tablespoon garlic, ground pepper
  • ¼ cup lemon juice (60 ml), + 3 tablespoons
  • ½ cup olive oil (120 ml) + 2 tablespoonsSalmon Dip
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • ¼ cup lemon juice (60 ml)

Salmon with walnut parsley pesto

Preparation

1. Mix parsley, walnuts, garlic, 3 tablespoons lemon juice, olive oil and pepper. Set aside.
2. Stir in pepper, salt and cayenne pepper. Sprinkle the mixture over the salmon fillet.
3. In a large pan, heat 2 tablespoons of olive oil. Place the salmon skin side down. Cook for 5 minutes. Turn the salmon over and then cook for another 5 minutes.
4. Pour ¼ cup (60 ml) lemon juice over the salmon. Cook for 3 more minutes until the lemon juice has reduced. Turn off the heat and place the salmon off the stovetop.
5. Spread the walnut parsley mixture on the salmon. Serve immediately
