Salad with walnuts, fruit and feta cheese

Ingredients

for 6 servings

  • Baby spinach leaves (140 g)
  • ½ cup strawberries (50 g), sliced
  • ½ cup blueberries (50 g)
  • ½ cup raspberries (50 g)
  • ½ red onion, thinly sliced (can be omitted from the recipe)
  • 1 apple, pitted, halved and thinly sliced
  • 1 cup walnuts (100 g), chopped
  • ⅔ cup feta cheese (100 g)

Salad with walnuts, fruit and feta cheese

Dressing

  • 1 cup strawberries (140 g)
  • ¼ cup balsamic vinegar (60 ml)
  • ¼ cup extra virgin olive oil (60 ml)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 clove of garlic
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Preparation

  1. Add the cleaned strawberries to the blender for the dressing.
  2. Add the rest of the ingredients.
  3. Blend until smooth and chill in the refrigerator.
  4. Slice the strawberries, apple and onion.
  5. Mix all salad ingredients in a large bowl.
  6. Drizzle with desired amount of dressing and mix.
  7. Sprinkle feta cheese on top and serve.
